Audacity is legitimate audio-editing software. Access to the microphone is normal if you use it for recording, and the app may read and write audio files you choose to open or export. Removing the app will stop access to its editing tools but will not normally remove your saved audio projects unless you delete them separately. As with any recording app, review microphone access in macOS settings if you do not want it to capture audio.
Recommendation: Keep Audacity if you record or edit audio on your Mac. If you no longer use it, you can remove the app and optionally clear its support files later, but keep any projects or exported recordings you still need first.
